Asparagus Chicken Soup

Ingredients:
2 cups of chicken stock (can use organic, boxed or homemade)
3.5 ounces chicken breast, diced
Fresh ground black pepper, to taste
Minced garlic, to taste
asparagus (allowable amount), sliced

Directions:
Heat chicken stock in a pan. Add chicken and bring to a boil. Boil for a few minutes and reduce heat. Add asparagus. Cook for a few minutes until the asparagus is tender-crisp. TIP: To cut down on cooking time, use cooked chicken breast or canned chunk chicken breast. Variations: Substitute 2 cups water instead of chicken stock for a low sodium option. Add extra spices to compensate for the loss of flavor.

Ingredients:
2 cans (10 3/4 oz.) plain tomato puree or 2 3/4 cups home canned tomato puree
1/2 teaspoon dry mustard
1/8 - 1/4 teaspoon Stevia
1/2 teaspoon salt
1/4 teaspoon onion powder
1/8 teaspoon garlic powder
2 tablespoons vinegar

Directions:
Mix all ingredients together. Heat in the microwave or on stovetop just until hot. Let cool before serving.
